We process beef, hogs, and lamb under USDA inspection from March 1st thru August 31st each year.

Hogs will hang 14-18 days

Lamb will hang 14-18 days

It may appear to be a small point; but, We scrape the bone dust off each cut before packaging.

We first apply a 2 mil film and then wrap double-wrap with Kold-Lok paper!  Small cost for big savings!
