We have a fully functional butcher shop located in Deer Park, WI. We operate on a seasonal basis; open from May 1st through Labor Day!

1. We own the farm: we raise the beef, pork, chickens!
2. We dry-age our beef a minimum of 35 to 45 days before we cut them for the retail case. (It's not a marketing gimmick, it's our STANDARD!) So, every item that is made each week and contains beef....has been dry-aged to perfection!
3. We make every item fresh each week on Wednesdays and Thursdays before it is sold on Friday and Saturday. We do this each and every week.....so no need to ask yourself, "how long" or "how old" or "is this fresh" type question. It's FRESH every week!
